Ingredients

  • 20–24 oz chicken breast, cut into bite-sized pieces

  • 2 cucumbers

  • 10 oz shredded carrots

  • 2 cups jasmine rice

  • 3–4 tbsp white wine vinegar, divided

  • 1 tsp sugar

  • 1 tbsp minced garlic

  • 1 tbsp sriracha (adjust to taste)

  • 4–6 tbsp sour cream

  • 1–2 cups Bulgogi sauce

  • Dr. C's Magical Meat Dust (to taste)

  • Sesame seeds for garnish

  • Olive oil

  • Salt and pepper

Instructions

Prepare the Rice:

Cook jasmine rice according to the package instructions. TIP: Use a rice cooker for perfect rice every time.

Quick Pickled Cucumbers:

  1. In a bowl, mix 2 tbsp white wine vinegar, 1 tsp sugar, and a generous pinch of salt.

  2. Peel cucumbers into thin strips using a vegetable peeler.

  3. Toss cucumber strips in the brine and set aside to pickle.

Sriracha Crema:

In a small bowl, combine sour cream, sriracha, and 1 tsp water. Mix until a smooth, thin consistency. Adjust sriracha to your preferred spice level.

Cook Carrots:

  1. Heat a drizzle of olive oil in a skillet over medium heat.

  2. Add shredded carrots, salt, and pepper.

  3. Cook until warmed through but still slightly crisp, about 3–4 minutes.

  4. Set aside.

Prepare Chicken:

  1. In the same skillet, heat another drizzle of olive oil over medium heat.

  2. Add chicken pieces, season with salt, pepper, and generously sprinkle Dr. C's Magical Meat Dust.

  3. Cook for 4–5 minutes until chicken is mostly cooked through.

  4. Add minced garlic and sauté until fragrant, about 30 seconds.

  5. Pour in remaining white wine vinegar and Bulgogi sauce.

  6. Simmer until sauce thickens and chicken is fully cooked.
