Ingredients

20–24 oz chicken breast, cut into bite-sized pieces

10 oz shredded carrots

2 cups jasmine rice

3–4 tbsp white wine vinegar, divided

1 tsp sugar

1 tbsp minced garlic

1 tbsp sriracha (adjust to taste)

4–6 tbsp sour cream

1–2 cups Bulgogi sauce

Instructions
Prepare the Rice:
Cook jasmine rice according to the package instructions. TIP: Use a rice cooker for perfect rice every time.
Quick Pickled Cucumbers:

In a bowl, mix 2 tbsp white wine vinegar, 1 tsp sugar, and a generous pinch of salt.

Peel cucumbers into thin strips using a vegetable peeler.

Toss cucumber strips in the brine and set aside to pickle.

Sriracha Crema:
In a small bowl, combine sour cream, sriracha, and 1 tsp water. Mix until a smooth, thin consistency. Adjust sriracha to your preferred spice level.

Cook Carrots:
