Juicy sirloin steaks, a rich and umami mushroom gravy, creamy mashed potatoes, caramelized onions, and roasted carrots — all brought together with Dr. C’s Magical Meat Dust for bold, balanced flavor from start to finish.

Ingredients

For the Steaks & Mushroom Gravy

  • Sirloin steaks

  • Baby bella mushrooms, sliced

  • Garlic, minced

  • Dijon mustard

  • Beef stock or beef concentrate

  • Sour cream

  • Butter

  • Olive oil

  • Salt & pepper (to taste)

For the Mashed Potatoes

  • Yukon gold potatoes, cubed

  • Butter

  • Sour Cream

  • Salt & pepper (to taste)

For the Roasted Carrots

  • Carrots, peeled and cut into spears

  • Olive oil

  • Salt & pepper (to taste)

  • Dr. C’s Magical Meat Dust

For the Caramelized Onions

  • Yellow Onion (sliced thin)

  • Salt & pepper (to taste)

  • Butter

 


Instructions

1. Roast the Carrots

Preheat your oven to 425°F. Toss the carrots with olive oil and a generous sprinkle of salt, pepper, and Dr. C’s Magical Meat Dust. Spread them out on a parchment-lined baking sheet and roast for 20–25 minutes, flipping once, until tender with lightly charred edges.

2. Make the Mashed Potatoes

Add the potatoes to a large pot of salted water. Bring to a boil and cook until fork-tender, about 15–18 minutes. Drain well, then mash with butter, sour cream, salt, and pepper. Adjust seasoning to taste and keep warm.

3. Sear the Steaks

Pat the sirloin steaks dry and season generously on both sides with salt, pepper, and Dr. C’s Magical Meat Dust. Heat a drizzle of oil in a large skillet over medium-high heat. Sear the steaks 3–5 minutes per side, depending on thickness and desired doneness. Remove from the pan and let rest.

4. Caramelize the Onions

In the same skillet, add a little more butter if needed. Add the onions and cook until softened and lightly caramelized. Salt and pepper to taste.


5. Build the Mushroom Gravy

In the same skillet, add a little more butter if needed. Stir in the mushrooms and cook until browned and tender. Add garlic and cook until fragrant.

Stir in Dijon mustard and beef stock, scraping up all the flavorful browned bits from the pan. Reduce heat and let the sauce simmer until slightly thickened. 
TIP: If you can't get it to thicken, you can use a corn starch slurry to thicken that up.

6. Bring It All Together

Slice the rested steaks and spoon the mushroom gravy generously over the top. Serve alongside the mashed potatoes topped with caramelized onions and roasted carrots.
